MERRY CHRISTMAS!

Merry Christmas
to all our blogger friends!

I seem to have lost interest in posting to our blog lately... I guess it feels like I dont have anything worthy of a report.  But we still enjoy reading your blogs and hearing about where you are and what you're up to... and we really appreciate our readers comments, so don't stop watching!

We are still here at the Sands RV resort in the Palm Springs area.  We find things to occupy our time, but we're ready to move on.  We paid for a month, so we are here until January 6th.  Not sure what we will do on Christmas... or New Years... or our Anniversary.  We will be here for all of them.  We were in San Antonio, Texas for all of them last year. 

We attempted our first hike of the area yesterday.  It was such a beautiful day... sunny in the 70s with no wind!  But it was still too early for a  hike... Jeff's ankle couldnt take the uneven terrain on the trail.  We took the araby trail which goes by Bob Hope's house.  We went quite a ways up the hill... probably further than Jeff should have, but we made it to a view of his house.


That is a photo that Jeff took at the start of the trail.  We attempted alot more pictures, but all we could get from the camera was "system error"!!  Uugh!!!

 
Until this ankle heals, I guess Jeff will have to stick with the work out room.


Once we leave here and are on the move again, Im sure I will get back to blogging... and maybe I can even make it interesting!  But until then... we are here!  and if you're a blogger, we are probably following you!  Be safe and have a Merry Christmas!

  10. I get like that sometimes - just not in the mood to Blog. And next thing I know a week or more has gone by and people are e-mailing me because they are worried.

    Last year on one or two occasions I booked in a RV Park for a month (much less expensive than paying a weekly rate) and found that after two weeks I was ready to move on. So won't make that mistake this year. Seems two weeks is my max for wanting to stay anywhere. Too many other places to see !

    Boy you have a lot of birds. What kind of black birds are they.
    How is Jeffs ankle now. At least he is able to do something.

  13. Curd ( yogurt) Quinoa


    Ingredients

    Queens Quinoa:1 cup

    Water: 2 cup

    Peanuts: =1/4 cup

    Butter/Ghee: 1 tbsp

    Cumin Seeds ( Zeera) : ½ tea spoon

    Mustard Seeds (Rai) : ½ tea spoon

    Dry red Chilly: 2

    Curry leaves: 3-4

    Chana dal( Bengal gram) : ½ tea spoon

    Dhuli Urad dal (black gram) : ½ tea spoon

    Ginger finely chopped: ½ tea spoon

    Curd (thick): 1 cup

    Finely chopped Cucumber: ½ cup

    Coriander leaves: 1 table spoon

    Salt to taste. Cooking oil, 1 tea spoon

    Recipe

    Rinse the quinoa: Measure 1 cup of quinoa and place into a fine-mesh strainer. Toast quinoa in saucepan (optional): . Add 2 cups of water or broth and the salt. Bring quinoa and liquid to a boil in a medium saucepan. Reduce heat to low, cover and simmer until tender and most of the liquid has been absorbed, 15 to 20 minutes. Fluff with a fork.

    Heat oil in a pan

    Saute peanuts,

    For tadka

    Add Ghee/ butter

    Add Cumin Seeds, Mustard seeds,

    Broken red chillies, curry leaves, mix it properly

    Add chana dal and urad dal, mix it well

    Add finely chopped ginger, keep stirring it till the dal becomes golden brown in color

    Bring it down from the stove, let it cool for a while

    Put cooked quinoa in a bowl,

    Whisk the curd to make it smooth and creamy

    Add curd to Quinoa, put roasted peanuts, add finely chopped cucumber, put tadka in it, put some finelt chopped coriander

    Quinoa curd is ready to be served
